Sometimes true flavor is in the smallest details
We all have our favorite meals, whether it is delicate, lightly seared halibut with roasted asparagus and lemon verbena, or something heartier like a steak from farm-raised grass-fed beef, with mashed potatoes and a nice red wine sauce. The protein of these dishes is generally considered the “rock star” of the plate, but these star acts are nothing without those special supporting accompaniments that help make them shine.
At the Kittle House we pride ourselves on the intricate details that go into each and every dish that leaves the kitchen. Chef Jay, loves sourcing even the smallest ingredient that he can add to a dish that will make it just that much more special and in the spirit of local sustainability.
This week, Chef Jay has some specialty items from M/X Morningstar Farms, like radiant red shishito peppers. These little red peppers may look diminutive, but they are bursting with flavor, and have a slightly sweeter taste than regular green shishitos.
M/X Morning Star Farms also brought along some little fingerling potatoes that are actually like baby yams! These little unique potatoes, like the peppers, may be small, but they add a remarkable hint of sweetness to Jay’s creations that make the dish shine.
And while it’s the little things that can make a difference in any dish, the difficult part, though often the most fun, is finding those little nuances and not using them haphazardly. Since these little treasures are local, seasonal,and limited, once they are gone, they are gone!
